I couldn’t think of a name for this amazingly delicious and super satisfying dish, so I posted on Facebook and BOOM! Thanks to my fans, I was able to come up with “Apple Pie Chia Delight”.
This can be enjoyed as a topper to the famous wheat-free Banana Bread or a stand-alone treat after dinner!
With or without whipped cream, I promise this is a hit.
I always like to use organic apples and usually Gala. I did use 1 Gala and 1 Red Delicious for this
Chia seeds add more “plump” and are filling. These seeds come from the Chia plant and are native to Mexico and Guatemala. I’ve read that the word “chia” is the ancient Mayan word for “strength”.
Loaded with fiber, antioxidants and omega-3, these tiny little seeds can help with digestion, heart health and diabetes!
Using chia seeds with liquid provides a gel-like texture which is great for puddings and this apple pie delight!
This recipe is so simple to make. Takes about 30 minutes total from cutting up the apples to eating the scrumptious treat!
Cooking the apple pieces for just about 15 minutes in a little water is all it takes. Adding in some apple pie spice and cinnamon is sure to make the house smell amazingly cozy!
Once cooked, can be enjoyed as a stand-alone dish for you to enjoy alone or with guests.
Or use it as a topping to your favorite loaf!

Apple Pie Chia Delight
- 2 organic apples
- 1/4 cup water
- 2-4 tablespoons whole fat coconut milk (from can) (can use coconut milk from box)
- 2 teaspoons apple pie spice
- 2 teaspoons cinnamon
- 2 tablespoons chia seeds
- 1-2 tablespoons sweetener of choice (honey or pure maple syrup works best)
- Peel and dice up apples. Place into a pot and add 1/4 cup of water. Steam (or lightly boil) apples for about 10 minutes until soft. Take off heat and add the spices, chia seeds and coconut milk.Allow the chia seeds to absorb the liquid (approx. 15 minutes). Add the sweetener to taste. You can eat it right away or place in fridge for a bit. Add whipped cream for a fantastic treat!
